Chicken Legs









So I had to laugh... when I went through my camera to print pictures I found this picture on the camera. Tori took this picture of my plate of chicken legs I made for the dinner we had a few weeks ago with Todd's Dad, Letty, Mom, and Dad. Just looking at this picture makes me chuckle. Tori must have been hungry. :-) She tells me it looked so yummy she had to take a picture. So now we have forever a pic of the teriyaki chicken legs. And yes, Nan, you stir 'em up in a big ol' pot.

Dinner with family and good food!

This last weekend Todd's dad and Letty were visiting so I decided to have a family dinner on Sunday and invited Mom and Dad to dinner. For the dinner, I thought it would be nice to serve Dad's famous teriyaki chicken legs... if you haven't had them you're missing out. Dad was kind enough to give me his recipe so I could impress Todd's family and I must say the chicken legs turned out great so I thought I'd share his teriyaki recipe with all of you. I think this would be really yummy for chicken breast or thin sliced beef also.

Dad's Teriyaki
2 cups soy sauce
2 cups water
2 cups sugar
6 cloves garlic (chopped finely)
1 ginger root bulb (shredded)
Mix together in a big pot and add chicken legs (about a dozen). Cook over medium heat for one hour with the lid off. Stir the meat occasionally.

The meat on the chicken bone is so tender and juicy it just falls off. Save the marinade and service over rice! Enjoy!

My First 5K Race!

So guess what everyone? I ran my first 5k race on Monday, Sept. 3 and made it in 33 minutes. Can you believe it?  I ran the race at the Payson Onion Days (Payson is a little city south of Provo).




I've been running on my treadmill for a long time and just started thinking it would be a good goal for me to run a race. So I found out about this race and signed up and went and did it! It was a great experience and I'm thinking of doing another race in a couple weeks. Just had to share with everyone. I definitly wasn't one of the fastest runners but wasn't the worst. :-) I placed 98th out of 151 and placed 12th out of 15 in my age group.
